Saving Seeds from Your Best Plants
Saving seed completes the growing cycle. A seed is sown, the plant develops, a crop is harvested and part of that crop is allowed to produce the seed for another season.
It can reduce the need to buy replacements, help preserve a valued variety and gradually produce plants suited to a particular garden. It also encourages us to observe crops in a different way.
Instead of selecting only the first or largest vegetable for the kitchen, we begin noticing which plants remained healthy, tolerated difficult weather and produced consistently throughout the season.
Begin with Open-Pollinated Varieties
Open-pollinated varieties are the best starting point for seed saving.
When they are pollinated by other plants of the same variety, their seedlings should broadly resemble the parent plants. Traditional and heirloom varieties are generally open-pollinated, although not every open-pollinated variety is necessarily old.
F1 hybrids are produced by crossing selected parent lines. Seed collected from an F1 plant may germinate, but the next generation can vary considerably and may not retain the qualities that made the original variety useful.
Check the original seed packet or catalogue. If the variety is marked F1, it is not the most dependable choice for preserving consistent characteristics.
Understand How the Plant Is Pollinated
Some vegetables mainly pollinate themselves, while others depend on insects or wind and cross readily with neighbouring plants.
Peas, many beans and tomatoes are among the easier crops for beginners because self-pollination reduces the likelihood of crossing.
Squash, pumpkins, courgettes, cucumbers, melons, sweetcorn and brassicas cross much more readily with compatible plants nearby. Peppers can also cross, particularly where pollinating insects move between varieties.
A crossed seed may still grow, but the resulting plant can be different from either parent. That can be interesting when experimenting, but it is not helpful when trying to preserve a particular variety.
Cross-Pollination Happens Within Compatible Groups
A courgette will not cross with a cucumber simply because they are growing beside each other. Cross-pollination happens between compatible plants of the same species or closely related groups.
The difficulty is that crop names do not always reveal those relationships. Several types of summer squash, courgette, marrow and pumpkin may belong to the same species and can therefore cross.
Different brassicas may also belong to the same species. Cabbage, broccoli, cauliflower, kale and kohlrabi can be closely related enough to exchange pollen.
Before saving seed from an unfamiliar crop, check its botanical species and pollination requirements rather than relying only on its common name.
Use Isolation When Necessary
Seed growers maintain varieties by separating compatible flowering plants or controlling how they are pollinated.
Possible methods include:
Growing only one variety from a compatible group
Separating varieties by a suitable distance
Staggering planting so varieties flower at different times
Covering flowers with suitable mesh
Hand-pollinating selected flowers
Using blossom bags to prevent unwanted insect visits
The distances needed vary by crop, landscape, wind and insect activity. A small garden cannot always provide enough physical separation.
For a beginner, growing only one variety from a cross-pollinating group is often the simplest option.
Remember that compatible crops in neighbouring gardens or nearby fields may also provide pollen.
Choose Healthy Parent Plants
Do not automatically save seed from whichever plant happens to remain at the end of the season.
Mark possible seed plants while the crop is still actively growing. Choose plants that demonstrate the qualities you want to preserve, such as:
Healthy growth
Good flavour
Reliable production
Useful size
Resistance to local weather
Slow bolting
Early or late maturity
Good storage qualities
Freedom from significant disease
Avoid saving seed from weak, badly diseased or uncharacteristic plants.
This does not mean choosing the largest fruit every year. A very large tomato on an otherwise poor plant may be less useful than good-quality fruit from a plant that remained productive throughout a difficult summer.
Save from More Than One Plant
Saving seed from a single plant creates a very narrow genetic sample.
Where space allows, collect from several healthy plants of the same variety. This helps retain more of the variety’s natural diversity and reduces the influence of one unusual parent.
The number of plants needed varies by crop. Self-pollinating vegetables can often be maintained from relatively few plants, while cross-pollinated crops generally require a larger population.
Even in a small garden, combining seed from several good plants is usually preferable to relying entirely on one.
Allow Seed to Become Fully Mature
A vegetable ready to eat is not necessarily ready to provide viable seed.
Beans and peas eaten fresh are harvested while their seeds remain young and tender. For seed saving, their pods must usually remain on the plant until they become dry and brittle.
Cucumbers and courgettes intended for eating are harvested while immature. Seed fruit must remain much longer, often until it becomes oversized, hard-skinned and no longer suitable for the kitchen.
Tomatoes and peppers should become fully ripe. Aubergines need to mature beyond their normal eating stage.
Seed maturity requires patience and may reduce the amount of food harvested from the selected plant.
Saving Seeds from Peas and Beans
Peas and beans are good beginner crops.
Choose healthy, true-to-type plants and leave selected pods untouched. Allow them to become brown and dry on the plant.
If prolonged rain threatens, lift individual pods or the entire plant once the seed is mature enough and complete the drying process somewhere sheltered and airy.
Shell the pods when they are thoroughly dry. Remove damaged, discoloured or insect-affected seeds.
Spread the seed out in a single layer and allow it to dry further before packing it away.
Label climbing beans, dwarf beans, peas and different varieties immediately. Once they have been removed from their pods, similar seeds can easily become confused.
Saving Tomato Seeds
Choose a fully ripe tomato from a healthy plant that displays the characteristics of the variety.
Cut the fruit and squeeze the seeds with their surrounding gel into a small labelled container. Add a small amount of water if necessary.
Leave the mixture for a short fermentation of approximately two or three days in a warm but not excessively hot location. Stir it periodically and do not allow it to remain indefinitely.
Fermentation helps separate the seed from its gelatinous coating.
Add water, stir and allow the heavier seed to settle. Pour away floating material and repeat until the seed is clean.
Tip the cleaned seed into a fine strainer, rinse it and spread it thinly on a smooth, labelled surface to dry. Stir or separate the seeds regularly so they do not remain in a damp clump.
Do not dry seed on absorbent paper if you want to remove it easily afterwards.
Saving Pepper Seeds
Allow the pepper to develop its full mature colour on a healthy plant.
Cut it open and remove the seeds carefully. Wear gloves when working with hot chillies and avoid touching your face or eyes.
Spread the seeds in a thin layer somewhere warm, dry and shaded. They should become hard and dry before storage.
Peppers can cross between compatible varieties, so seed purity is less certain when several varieties have flowered close together without protection.
Saving Lettuce Seeds
Lettuce must be allowed to bolt and flower.
The plant will become tall and produce many small flower heads. Seeds do not all ripen at once, so collection may continue over several days.
When the seed heads become dry and fluffy, collect them into a paper bag or cut entire branches and allow them to finish drying under cover.
Rub the dry heads gently to release the seed, then separate as much chaff as practical.
If you want to select for slower bolting, do not save seed from the first plant that flowers. Mark the plants that remained usable longest under the same conditions.
Saving Seeds from Squash and Pumpkins
Squash seed saving requires more planning because compatible varieties cross readily.
If pollination has been controlled, allow the selected fruit to mature fully on the plant. Harvest it at its normal mature stage and, where appropriate, allow it a further resting period before removing the seed.
Cut the fruit open and scoop out the seeds. Separate them from the flesh, rinse them thoroughly and spread them in a thin layer to dry.
Do not save seed from a fruit merely because it looks normal. The fruit developed from the parent plant’s existing genetics. Any cross-pollination affects the plants grown from its seeds and may not be visible until the following season.
Unknown squash crosses should not be assumed to be suitable for eating. Some ornamental or wild relatives can contribute genes associated with very bitter compounds.
Saving Cucumber Seeds
A cucumber grown for seed must remain on the vine long after the normal eating stage.
It may become large, yellow or brown and develop a hard skin. Once fully mature, cut it open and remove the seeds and surrounding pulp.
Depending on the tested method being followed, the mixture may undergo a short fermentation before the seeds are washed and dried.
Cucumbers cross readily with other varieties of the same species, so isolation or controlled pollination is needed if you want reliable seed.
Biennial Crops Need Two Growing Seasons
Carrots, beetroot, onions, leeks, parsnips and many brassicas are biennial. They normally produce their edible crop during the first season and flowers and seeds during the second.
Seed saving therefore requires selected plants to survive winter.
Depending on the crop and climate, they may remain in the ground under protection or be lifted, stored and replanted in spring.
Here in Hungary, winter temperatures can vary from mild periods to severe freezing. Leaving every selected plant outdoors creates a risk, but unsuitable indoor storage can also cause roots or bulbs to rot.
Biennial seed saving is rewarding, but it requires more space and planning than saving beans, peas or tomatoes.
Do Not Save Seed from Diseased Plants
Some plant diseases can be carried on or within seed.
Do not collect from plants showing serious bacterial, viral or fungal symptoms simply because they survived long enough to flower.
Remove obviously diseased seed, pods and fruit from the processing area. Clean tools and containers before moving to another variety.
Healthy-looking seed is not proof that it is disease-free. Where a significant seed-borne disease has affected the crop, purchasing clean replacement seed may be the more responsible choice.
Dry Seeds Thoroughly
Moisture is the greatest threat to stored seed.
Seed that feels dry on the surface may still contain enough internal moisture to develop mould when sealed inside a container.
After cleaning, spread the seed thinly somewhere dry, shaded and well ventilated. Turn it periodically and protect it from condensation, direct heat, insects and rodents.
Do not use high temperatures to speed the process. Excessive heat can damage the living embryo.
Drying time depends on seed size and surrounding humidity. Large beans require much longer than lettuce or tomato seed.
Label Seeds Before They Become Confused
Every batch should be labelled with:
Crop
Variety
Collection year
Parent location or bed
Any controlled-pollination method used
Useful characteristics of the parent plants
Make the label while processing the seed rather than relying on memory later.
I have stored seeds for years in simple envelopes arranged by crop category. Nothing elaborate is necessary. A clear label and suitable storage conditions matter far more than an expensive organising system.
Store Seeds Somewhere Cool, Dry and Dark
Once seed is completely dry, place it in a suitable envelope or airtight container.
Paper envelopes are useful for organising individual varieties, but they do not protect against humid air. Several labelled envelopes can be placed together inside a sealed container.
Store the container somewhere cool and dark with a reasonably stable temperature. Protect it from rodents, insects and condensation.
Avoid sheds and greenhouses where temperatures fluctuate dramatically. In a hot summer, these spaces can damage seed very quickly.
A small moisture-absorbing sachet can help in a sealed container, provided the seed was already properly dried before storage.
Test Older Seed Before Sowing
Seed viability gradually declines, and different crops remain usable for different lengths of time.
Before relying on an older packet, place a known number of seeds on damp paper, keep them under suitable germination conditions and count how many sprout.
If eight out of ten germinate, the rate is approximately 80 percent. If only a few germinate, sow more thickly or replace the seed.
Record the result on the packet so it can guide sowing decisions.
Build a Seed Collection Gradually
There is no need to save seed from every crop in the first year.
Begin with one or two straightforward, open-pollinated varieties such as peas, beans, lettuce or tomatoes. Learn how the seed looks when mature, how long it takes to dry and how well it germinates the following season.
