Growing your own food is only part of the journey. Knowing when to pick it, how to handle it and what to do with the inevitable glut can make the difference between a harvest that lasts for days and one that continues feeding you for months.

Harvesting is sometimes treated as the easy part of growing. In reality, timing matters. A courgette left for a few extra days can become enormous, beans can turn stringy and tomatoes may split or become overripe. Other crops, such as carrots, parsnips and winter squash, give us a much wider harvesting window.

Here in Hungary, the main harvest often arrives during very hot and dry weather. Produce picked in the middle of a summer afternoon can quickly lose moisture and quality. In cooler or wetter climates, the challenge may instead be getting crops harvested and dried before persistent rain encourages rotting or fungal problems.

This guide introduces the principles of harvesting, storing and preserving home-grown produce. The more detailed guides in this section will help you choose the right method for each crop and for the conditions where you live.

Harvest at the Right Time

A crop is not always ready simply because it has reached the expected number of days from sowing. Temperature, rainfall, soil, variety and growing conditions all affect how quickly it develops.

The plant itself usually provides the most reliable clues. These may include its colour, size, firmness, scent or how easily the crop separates from the plant. With some vegetables, tasting one is still the best test.

Young vegetables are often tender and sweet, while crops intended for storage usually need to become fully mature. A baby carrot can be pulled and eaten at almost any stage, but onions, garlic and winter squash need time to mature properly if they are to store successfully.

Frequent harvesting is particularly important with beans, peas, courgettes, cucumbers and many salad crops. Regular picking encourages the plants to continue producing and prevents good food from becoming oversized or tough.

Handle Every Harvest Carefully

Small cuts, bruises and broken skins shorten storage life. Damage may not look serious when a crop is first picked, but it creates an entry point for moulds and bacteria.

Use clean, sharp secateurs or a knife when a crop does not separate easily. Support heavy fruit while cutting it from the plant, and place harvested produce into a basket or shallow container rather than dropping it into a deep bucket.

Avoid leaving freshly harvested crops in direct sunshine. This is especially important during hot summers. Whenever possible, I harvest early in the morning, once the plants are dry but before the heat of the day builds. The produce can then be moved somewhere cool and shaded while I decide what will be eaten, stored or preserved.

Decide What Needs Using First

Not every harvested crop needs to be perfect. The important thing is to sort it promptly.

Produce with cuts, pest damage, split skins or bruising should be used first. Sound, undamaged crops can be set aside for longer storage. Anything showing active rot or mould should be removed so that it cannot affect the rest of the harvest.

This became particularly relevant when we harvested 17 kilograms of carrots from Bed 12. A harvest of that size cannot simply be left in a basket and forgotten. The damaged or forked carrots need using first, while the healthiest roots can be prepared for storage.

The same principle applies when rescuing crops after pest or weather damage. A tomato may still be perfectly usable even if part of the fruit needs cutting away, but it should not be placed among undamaged tomatoes intended to keep for longer.

Match the Storage Method to the Crop

Different crops need very different conditions.

Leafy vegetables and salads generally need cool, humid storage because they lose water quickly. Onions and garlic need dry conditions with good air circulation. Potatoes prefer darkness, cool temperatures and moderate humidity. Winter squash needs to remain dry and is usually stored at a warmer temperature than potatoes.

Some roots can be left in the ground until needed, provided the soil is not waterlogged, frozen solid or likely to be disturbed by rodents. Others can be stored in boxes of slightly damp sand or another suitable material. The best method will depend on both the crop and the local climate.

There is no single storage room that provides perfect conditions for everything. It is often better to use several smaller areas around the home, shed, cellar or outbuildings, each suited to a particular group of crops.

Cure Crops Before Long-Term Storage

Onions, garlic, potatoes and winter squash benefit from a period of curing before they are placed into storage.

Curing allows outer skins to dry or harden and minor surface damage to heal. However, the correct curing conditions are not the same for every crop. Onions and garlic need a dry, airy place protected from rain. Potatoes are cured away from light. Winter squash needs warmth and ventilation so that its skin can harden properly.

Trying to store these crops immediately after lifting them can trap moisture and encourage decay. A little extra care at this stage can add weeks or even months to their useful life.

Preserve What Cannot Be Eaten Fresh

Even with good planning, productive gardens sometimes provide more food than can be eaten immediately. Preserving allows that abundance to be carried into another season.

Freezing is convenient and retains much of a crop’s flavour and nutritional value. Drying is particularly useful for herbs, chillies, beans, tomatoes and certain fruits. Bottling, pickling, making jams and other traditional methods can turn a glut into food that remains useful throughout the year.

Fermentation has an especially long connection with home food production. Long before refrigeration, communities used salt, time and naturally occurring microorganisms to preserve seasonal vegetables. Sauerkraut, kimchi and many traditional pickles are familiar examples.

Fermentation does more than extend storage life. It changes flavour and texture and can introduce beneficial live microorganisms when the food is prepared and stored correctly. Save Seeds from Successful Plants

The harvest can also provide the beginning of next year’s garden.

Saving seed from healthy, productive plants allows you to preserve varieties you value and, over time, select plants that perform well in your particular soil and climate. It also adds another layer of resilience and independence to the garden.

Seed saving is not simply a matter of collecting any available seed. The parent plant should be healthy, the seed must be fully mature and the variety’s pollination habits need to be understood. Seeds must then be dried, labelled and stored correctly.

I have stored seeds for years using simple labelled envelopes arranged by crop group. The container matters far less than keeping the seed dry, cool and clearly identified.

Keep a Record of What You Harvest

Recording harvests provides a more accurate picture of what the garden is producing. Some harvests may be weighed, while others may simply be recorded as a bowl of tomatoes, a handful of herbs or enough beans for dinner.

A harvest record does not need to become another demanding garden job. A few quick notes are usually enough to build a genuinely useful history of the garden.

Make the Most of What You Grow

Harvesting and storage are not about achieving perfect self-sufficiency or preserving every last vegetable. They are about making thoughtful use of the food the garden provides.

Some crops will be eaten within minutes of being picked. Others will be cured, frozen, dried, fermented or stored for winter. A few will be left to mature for seed. Each approach helps extend the value of the work already invested in the garden.

By harvesting at the right stage, handling crops carefully and choosing an appropriate storage or preservation method, we can reduce waste while continuing to enjoy the garden well beyond the main growing season.
