Freezing, Drying and Preserving Your Harvest

The busiest part of the harvesting season can bring far more produce than we are able to eat fresh. Courgettes appear faster than expected, beans need picking every few days and fruit can move from underripe to overripe in a very short time.

Preserving does not have to mean processing everything or filling an entire pantry in one weekend. It is simply a way of carrying part of the harvest into another season.

Freezing, drying, pickling, making jams and bottling all have their place. The right choice depends on the crop, the equipment available and how you are likely to use the food later.

Preserve the Best Produce You Can

Preserving stops or slows deterioration, but it does not improve poor-quality ingredients.

Use produce that is:

  • Freshly harvested

  • Properly ripe

  • Free from rot and mould

  • Not badly bruised

  • Free from serious pest damage

Small imperfections can often be trimmed away, but do not preserve food that has already begun to decay.

Sort the harvest as soon as possible. Keep the best produce for fresh eating or long-term preservation and use slightly damaged but otherwise sound crops promptly in cooked meals.

Choose a Method You Will Actually Use

There is little value in preserving food in a form that does not suit the way you cook.

Before processing a glut, ask:

  • How will we use this later?

  • Do we have enough freezer or storage space?

  • Will the preserved food replace something we normally buy?

  • Can we process it safely with the equipment available?

  • How much time do we realistically have today?

Tomatoes might become frozen portions for sauces, dried slices, bottled passata or fermented salsa. Courgettes might be frozen for soups, dried into pieces or turned into chutney. Herbs might be dried, frozen or blended into a paste for freezing.

Several small batches prepared in useful quantities are often better than one enormous batch that becomes difficult to store or use.

Freezing Vegetables

Freezing is one of the simplest ways to preserve a wide range of vegetables. It stops microbial growth while the food remains frozen and greatly slows the chemical changes that reduce quality.

However, freezing does not sterilise food. Produce must be handled cleanly, cooled promptly and kept continuously frozen.

Prepare only as much as can be processed efficiently. Wash the vegetables, remove damaged parts and cut them into the size in which they will eventually be cooked.

Label every container with the crop, variety if useful, preparation method and freezing date.

Why Most Vegetables Should Be Blanched

Most vegetables benefit from blanching before freezing.

Blanching means briefly heating the prepared vegetables in boiling water or steam and then cooling them rapidly. This slows the enzyme activity that would otherwise affect flavour, colour and texture during frozen storage.

Blanching times vary according to the vegetable and the size of the pieces. Use instructions from a reliable food-preservation source rather than guessing.

Once the blanching time is complete, cool the vegetables immediately in very cold water. Drain and dry them thoroughly before packing.

Too little blanching may be less effective than no blanching, while excessive blanching partially cooks the crop and can reduce its quality.

Vegetables That Freeze Well

Crops commonly frozen successfully include:

  • Peas

  • French beans and runner beans

  • Broccoli

  • Cauliflower

  • Sweetcorn

  • Spinach and other cooking greens

  • Carrots

  • Peppers

  • Tomatoes intended for cooking

  • Prepared courgettes

  • Herbs

The texture of a thawed vegetable will rarely be identical to that of a freshly harvested one. Frozen produce is usually most successful in soups, sauces, stews, casseroles and other cooked dishes.

Vegetables with a high water content, such as cucumbers and crisp salad leaves, generally lose their original texture when frozen.

Freeze Produce in Useful Portions

Pack vegetables in quantities suitable for one meal or recipe.

Removing only what is needed prevents repeated thawing and reduces waste. Flattening bags of sauces, chopped vegetables or fruit purée also helps them freeze quickly and stack efficiently.

Remove as much excess air as practical before sealing. Air encourages freezer burn and gradual loss of quality.

For loose pieces, spread prepared produce on a tray and freeze it before transferring it into a labelled container. This prevents the pieces freezing into one solid block.

Cool cooked food before placing it in the freezer, but do not leave it standing at room temperature for an extended period.

Freezing Tomatoes and Fruit

Tomatoes can be frozen whole, chopped, roasted or cooked into a sauce. Their texture softens after thawing, but they remain useful for cooking.

Whole tomatoes can be frozen with their skins intact. Once partially thawed, the skins often slip away easily.

Soft fruit can be frozen on trays before being transferred into containers. This makes it possible to remove small amounts later for porridge, baking, smoothies or sauces.

Larger fruits should be washed, prepared and treated according to the needs of the particular fruit. Some sliced fruits may darken unless they are given an appropriate pretreatment.

Drying the Harvest

Drying preserves food by removing enough moisture to prevent microorganisms from growing easily.

It is useful for:

  • Herbs

  • Chillies

  • Tomatoes

  • Apples and pears

  • Plums

  • Beans and peas intended for dry storage

  • Thinly sliced vegetables

  • Some mushrooms

A dehydrator provides controlled temperature and airflow, but some crops can also be dried in an oven at a low setting or in a warm, well-ventilated place.

Outdoor sun-drying is possible only where temperatures, humidity, insects and hygiene can be managed safely. Hot weather alone does not guarantee suitable drying conditions.

Drying Herbs

Harvest herbs after surface moisture has dried and before the heat of the day causes them to wilt.

Remove damaged leaves and any insects. Wash only when necessary, and make sure the herbs are thoroughly dry before the main drying process begins.

Small bundles can be hung somewhere warm, shaded and airy. Do not make the bundles too large, as the centre may remain damp.

Leaves can also be spread on drying racks or placed in a dehydrator.

Herbs are ready for storage when the leaves feel crisp and crumble easily. Stems should snap rather than bend.

Store dried herbs whole where possible and crush them when needed. This helps retain their aroma for longer.

Drying Chillies

Chillies can be dried whole when they are thin-walled and completely sound. Thicker varieties usually dry more successfully when cut into pieces.

Wear gloves when handling hot chillies and avoid touching your face or eyes. Maintain good ventilation if using a dehydrator or oven, because the airborne compounds can be irritating.

The chillies must become completely dry before storage. Any remaining internal moisture can encourage mould.

Store them whole, crushed or ground in airtight containers away from heat and strong light.

Drying Tomatoes and Fruit

Choose ripe but firm produce.

Cut tomatoes into even pieces so that they dry at a similar rate. Smaller varieties may be halved, while larger tomatoes are better sliced.

Fruit should also be cut evenly. Remove damaged areas, stones, cores or seeds as appropriate.

Dry until the texture recommended for that particular food has been reached. Fruit may remain flexible, while many vegetables should become much drier and more brittle.

Allow dried food to cool before packing it. Warm food sealed inside a container can create condensation.

Condition Dried Fruit Before Storage

Pieces of dried fruit do not always contain exactly the same amount of moisture.

After cooling, place the fruit loosely into a clean container for several days and shake or turn it daily. This allows remaining moisture to distribute more evenly.

If condensation appears, return the fruit to the dehydrator or oven for further drying.

Once its condition remains stable, pack the fruit into airtight containers and store it somewhere cool, dry and dark.

Check dried foods regularly during the first few weeks. Discard anything that develops mould.

Drying Beans and Peas for Storage

Beans and peas intended for dry storage should remain on healthy plants until the pods have matured and become dry.

If wet weather threatens, the plants or pods can be brought under cover to finish drying somewhere airy.

Shell the beans only when the pods are thoroughly dry. Spread the seeds out and allow them to continue drying before packing.

Store dried beans and peas in clean, airtight containers somewhere cool and dark. Label each batch clearly.

Beans saved for eating should be kept separate from those selected as seed for the next growing season.

Making Jams and Fruit Preserves

Jam uses fruit, sugar, acidity and heat to create a product that can be stored for considerably longer than fresh fruit.

The balance between these ingredients affects both safety and the ability of the jam to set. Follow a tested recipe designed for the fruit being used rather than reducing sugar or changing quantities without understanding the effect.

Use clean, undamaged jars intended for food preservation. Follow the recipe’s instructions for preparing the jars, filling them, processing them and checking the seals.

Traditional preserves can also carry the story of a place and its harvest. Hungarian plum jam is a good example: a seasonal glut is slowly transformed into something that can remain part of the household long after the plums have disappeared from the trees.

These recipes deserve their own space because the story behind the food is often as valuable as the list of ingredients.

Pickling with Vinegar

Vinegar pickling creates an acidic environment that helps preserve vegetables.

Suitable crops include cucumbers, beetroot, onions, peppers, courgettes and green beans. Spices, herbs and sugar can be added for flavour, but the vinegar, water and vegetable proportions should come from a tested recipe.

Do not weaken the vinegar or add extra vegetables simply to fill the jar. Changes to acidity and density can make a tested processing method unreliable.

Use vinegar of the strength specified in the recipe and jars suitable for preserving. Follow the stated preparation, processing and storage instructions.

Refrigerator pickles are different from shelf-stable pickles. They must remain refrigerated and should not be treated as safely preserved at room temperature.

Bottling and Canning Safely

In Britain and parts of Europe, preserving food in heat-processed jars is often called bottling. American guidance generally calls the same broad process canning.

The safety requirements depend on the acidity of the food.

High-acid foods and properly acidified recipes may be suitable for processing in a boiling-water canner. Low-acid vegetables require pressure canning using a tested process. An ordinary pressure cooker is not automatically a suitable substitute for a purpose-designed pressure canner.

Tomatoes should not be assumed to contain enough acid for boiling-water processing. Tested recipes often require a measured amount of bottled lemon juice or citric acid.

Never invent processing times or rely on an old family method simply because it has appeared to work in the past. Use an up-to-date, tested recipe and follow its ingredients, jar size, headspace, processing method, time and altitude adjustments exactly.

Oven canning, open-kettle canning and turning filled jars upside down are not safe substitutes for an approved heat-processing method.

Check Every Jar Before Storage and Use

After processing and cooling, confirm that each jar has sealed correctly according to the lid manufacturer’s instructions.

Label sealed jars with the contents and processing date. Store them somewhere cool, dry and away from direct light.

Do not consume food from a jar that is:

  • Leaking

  • Bulging

  • Cracked

  • Unsealed

  • Spurting liquid when opened

  • Producing an unusual smell

  • Showing mould or unexpected bubbles

Never taste food to decide whether a suspect jar is safe. Some dangerous toxins cannot be identified by appearance, smell or taste.

When in doubt, dispose of the contents safely.

Fermentation Is a Different Process

Fermentation uses beneficial microorganisms and controlled conditions to change and preserve food.

Vegetables are commonly fermented in a measured salt brine, where naturally occurring lactic-acid bacteria create an increasingly acidic environment. This is different from vinegar pickling, even though the finished foods may appear similar.

Fermentation requires clean equipment, correct salt levels, suitable temperatures and vegetables kept beneath the brine. Because it is a substantial subject in its own right, the following two guides explore its history, potential benefits and a safe method for beginners.

Keep Useful Records

Preserving records help identify which methods genuinely suit the household.

Record:

  • What was preserved

  • The variety

  • Harvest and processing dates

  • The method used

  • The quantity produced

  • Where it was stored

  • How well it retained its quality

  • Whether it was actually used

These notes make it easier to plan future crops. There may be little reason to grow extra produce for a preserve nobody enjoys, while a useful frozen sauce or favourite jar of plum jam may justify growing considerably more.

Preserve the Harvest with Purpose

Preserving should make the harvest more useful rather than turning it into another source of pressure.

Start with the freshest produce, choose a method suited to the crop and prepare quantities that fit the way you eat. Label everything and check stored food regularly.

Freezing offers convenience, drying reduces the space required and traditional preserves allow seasonal flavours to be enjoyed much later. Used thoughtfully, each method helps extend the value of the garden while reducing waste.
