Extending the Harvest into Autumn and Winter

The arrival of autumn does not have to bring harvesting to an abrupt end. Many vegetables can remain productive for weeks or months after summer crops begin to decline, particularly when they are established early enough and protected from damaging weather.

Season extension is not about recreating summer conditions. It is about reducing the effects of cold, wind, heavy rain and frost so that suitable crops remain harvestable for longer.

The results will depend on climate, crop variety, the expected first-frost date and the protection available.

Start with Suitable Crops

Protection is most effective when used with crops that naturally tolerate cooler conditions.

Suitable vegetables may include:

  • Kale

  • Leeks

  • Brussels sprouts

  • Winter cabbage

  • Chard

  • Spinach

  • Lamb’s lettuce

  • Winter purslane

  • Hardy lettuce

  • Rocket

  • Mizuna

  • Tatsoi

  • Pak choi

Cold tolerance varies between species and varieties. A winter-hardy lettuce may survive conditions that would destroy a summer variety.

Check seed descriptions carefully and choose varieties recommended for autumn, winter, overwintering or low-temperature growing.

Establish Crops Before Growth Slows

Autumn and winter crops need to reach a useful size while warmth and daylight remain.

As days shorten, plants may survive without making much new growth. A small seedling entering winter will provide little to harvest, even if it remains alive.

Sow or transplant early enough for crops to develop strong roots and several healthy leaves before temperatures fall significantly.

Understand the Difference Between Growth and Survival

A plant may survive winter without continuing to grow.

Cold-tolerant vegetables often remain in good condition during low temperatures, but new growth slows or stops when light levels are insufficient. They effectively wait in the garden until conditions improve.

Season extension therefore depends partly on storing mature crops in the ground or under cover rather than expecting continuous winter production.

Harvest lightly during periods of little growth. Removing too many leaves can weaken the plant and leave nothing for later.

Know the Limits of Protection

Fleece, cloches and tunnels can raise the temperature around plants by a small but useful amount. They can protect against light frost and reduce wind exposure, but they cannot guarantee survival during severe cold.

The effectiveness of protection depends on:

  • The outside temperature

  • The duration of the cold period

  • Wind strength

  • Soil moisture

  • Crop condition

  • The number of protective layers

  • Whether the structure is sealed or draughty

  • Heat stored in the soil

A brief frost may cause little harm, while several days of freezing weather can penetrate covers and frozen soil.

Use protection to improve a crop’s chances, not to grow unsuitable plants indefinitely.

Use Horticultural Fleece

Fleece is lightweight, breathable and easy to place over crops.

It can:

  • Reduce frost damage

  • Protect against cold wind

  • Soften the impact of heavy rain

  • Create a slightly warmer growing environment

  • Provide some protection from pests

Support fleece above delicate crops with hoops where possible. Wet material resting directly on leaves can become heavy and may increase cold damage.

Secure the edges carefully without making the cover impossible to lift for inspection and harvesting.

Fleece deteriorates with repeated exposure to sunlight, wind and sharp objects. Dry, fold and store reusable pieces when they are no longer needed.

Add a Second Layer When Necessary

Two layers of fleece can provide more protection than one, provided the structure can support them and some air remains between the layers.

Additional protection may be useful during a short period of unusually cold weather. Remove unnecessary layers when temperatures recover so crops receive enough light and ventilation.

Do not leave heavy, wet coverings directly on plants. Crushed or poorly ventilated foliage is vulnerable to rot.

Use Cloches

Cloches protect individual plants or short rows.

They may be made from:

  • Glass

  • Clear rigid plastic

  • Reusable transparent covers

  • Purpose-made tunnels

  • Large containers adapted safely for temporary protection

Cloches can warm the soil and shield crops from rain and wind. They are particularly useful for salads, spinach, spring onions and small leafy vegetables.

Ventilate them on sunny days. Temperatures beneath a clear cover can rise rapidly even when the air outside feels cool.

Secure lightweight cloches against wind and make sure their edges cannot damage leaves.

Build Low Tunnels

Low tunnels use hoops covered with fleece, insect mesh or clear material.

They can protect longer rows and entire narrow beds. Their low volume allows some warmth from the soil to remain around the crop overnight.

For autumn and winter use:

  • Anchor hoops securely

  • Keep the covering clear of plant leaves where possible

  • Seal the ends during cold nights

  • Ventilate during warm days

  • Remove snow before its weight damages the structure

  • Repair holes promptly

  • Check regularly for trapped pests

Clear plastic provides more shelter from rain but requires careful ventilation. Fleece breathes more easily but offers less protection from persistent wet weather.

Use Cold Frames

A cold frame provides a protected growing area without artificial heat.

It can be used for:

  • Winter salads

  • Spinach

  • Spring onions

  • Parsley

  • Coriander

  • Young brassicas

  • Hardening off plants

  • Protecting containers

Place the frame where it receives useful light and is sheltered from strong wind.

Open the lid on mild or sunny days to release excess heat and humidity. Close it before temperatures fall in the evening.

Condensation is a sign that ventilation may be needed. Persistent humidity encourages mould, rot and fungal disease.

Make Use of Greenhouses and Polytunnels

An unheated greenhouse or polytunnel can extend the harvest considerably.

After summer crops finish, the protected space may be replanted with:

  • Lettuce

  • Spinach

  • Rocket

  • Mizuna

  • Tatsoi

  • Lamb’s lettuce

  • Winter purslane

  • Spring onions

  • Coriander

  • Parsley

  • Radishes

  • Pea shoots

  • Chard for young leaves

Protected structures do not remain frost-free in all climates. During prolonged cold, their internal temperature may approach the outdoor temperature.

Additional fleece placed over crops inside the structure can provide a second level of protection.

Ventilate Protected Crops

Cold weather does not eliminate the need for ventilation.

On bright days, temperatures inside a greenhouse, tunnel, cold frame or cloche can become unexpectedly high. Warm, humid air followed by a cold night encourages condensation and disease.

Ventilation helps to:

  • Reduce excess heat

  • Lower humidity

  • Dry wet leaves

  • Improve airflow

  • Reduce fungal problems

  • Strengthen plants

Open structures when conditions allow and close them again before the temperature falls.

Avoid watering leaves late in the day, particularly under cover.

Protect Crops from Wind

Cold wind can damage leaves, increase water loss and reduce the temperature around plants.

Useful wind protection includes:

  • Hedges

  • Permeable windbreak mesh

  • Fences with gaps

  • Low tunnels

  • Cloches

  • Straw bales positioned safely

  • Existing garden structures

A solid barrier can create turbulence on its sheltered side. A permeable windbreak slows the air more gradually.

Check covers and structures before autumn storms arrive. Loose material can damage both crops and neighbouring property.

Protect Roots with Mulch

Mulch insulates the soil and reduces sudden temperature changes around roots.

Suitable materials may include:

  • Straw

  • Chopped leaves

  • Leaf mould

  • Mature compost

  • Dry plant material

  • Other locally appropriate organic mulches

Mulch can be especially useful around:

  • Carrots

  • Parsnips

  • Leeks

  • Chard

  • Perennial vegetables

  • Overwintering onions or garlic

  • Established brassicas

Do not pile wet material against stems or crowns. This can encourage rotting and create shelter for slugs, snails and rodents.

In climates where the ground freezes deeply, a thick mulch may delay freezing and make root crops easier to lift. It cannot always prevent freezing during prolonged severe cold.

Leave Root Crops in the Ground

Some root crops can remain in the soil and be harvested as required.

Possible candidates include:

  • Carrots

  • Parsnips

  • Beetroot

  • Turnips

  • Swede

  • Jerusalem artichokes

Whether this is practical depends on soil type, drainage, pest pressure and winter severity.

Heavy or waterlogged soil may cause roots to rot. Frozen ground may make harvesting impossible. Rodents and other animals may also damage crops left outside.

Where these risks are high, harvest and store the roots before conditions deteriorate.

Earth Up Leeks

Leeks are among the most useful winter vegetables because many varieties tolerate cold and remain in the ground until needed.

Drawing soil or mulch around the stems can increase the blanched section and provide some additional protection.

Harvest before the ground freezes solid if winter conditions are severe. Choose varieties bred for winter harvesting rather than relying on early types.

Support Tall Brassicas

Kale, Brussels sprouts and winter cabbage can be damaged by strong wind, particularly when the soil becomes wet and loose.

Firm the soil around unstable plants and add stakes where necessary. Use ties that will not cut into thickening stems.

Remove yellowing or diseased lower leaves to improve airflow and reduce places where pests can shelter.

Netting should be checked regularly so that it does not become tangled, collapse under snow or trap wildlife.

Harvest Before Severe Weather

Season extension does not mean every crop should remain outside regardless of the forecast.

Harvest vulnerable produce before:

  • A severe frost

  • Prolonged freezing weather

  • Heavy snow

  • Flooding

  • A major windstorm

  • Persistent cold rain

  • Conditions that will prevent access to the garden

Prioritise tender crops and anything already close to maturity.

Understand Light Frost and Hard Frost

A light frost may affect only exposed leaves and may be tolerated by hardy crops.

A hard frost freezes plant tissues more deeply and may damage roots, stems and growing points. Repeated freezing and thawing can be more destructive than a single brief frost.

Cold air also settles in low areas. Frost pockets may experience lower temperatures than nearby raised or sloping ground.

Observe which parts of the garden frost first and use the more sheltered positions for vulnerable autumn crops in future seasons.

Do Not Harvest Frozen Crops Immediately

Frozen leaves and roots can be brittle and easily damaged.

Where possible, allow hardy crops to thaw naturally before harvesting or handling them. Walking among frozen plants can break leaves and stems that would otherwise recover.

Some vegetables, including kale and parsnips, may taste sweeter after exposure to cold because changes within the plant increase the concentration of sugars.

This does not mean they are immune to severe or prolonged freezing.

Manage Water Carefully

Autumn crops need moisture, but they generally use less water as temperatures and daylight fall.

Before watering, check the soil beneath the surface. Reduce the frequency while still preventing young plants and protected crops from drying out.

Crops under cloches, frames, tunnels and greenhouses do not receive normal rainfall and may still need watering.

Water earlier in the day so leaves and surfaces can dry before night. Avoid keeping cold soil continuously saturated.

Improve Drainage

Winter wet can be more damaging than cold.

Waterlogged roots lack oxygen and become vulnerable to rot. If drainage is poor:

  • Clear blocked channels

  • Keep paths lower than raised growing areas

  • Avoid walking on saturated beds

  • Repair leaking irrigation

  • Use raised beds where appropriate

  • Shelter selected crops from excessive rain

  • Add organic matter over time to improve soil structure

Do not dig or cultivate heavy soil while it is saturated, as this can cause lasting structural damage.

Continue Harvesting Regularly

Crops should still be checked and harvested during autumn.

Regular picking:

  • Removes damaged produce

  • Reduces waste

  • Encourages leafy crops to continue

  • Prevents oversized or woody roots

  • Reveals pest and disease problems

  • Stops mature crops deteriorating in wet weather

Harvest on a dry day where possible. Wet leaves stored in enclosed containers can spoil quickly.

Take only what is needed from slow-growing winter salads so the plants retain enough foliage to continue.

Use Cut-and-Come-Again Harvesting

Leafy vegetables can often be harvested by removing outer leaves and leaving the centre intact.

Suitable crops include:

  • Kale

  • Chard

  • Spinach

  • Lettuce

  • Rocket

  • Mizuna

  • Mustard greens

  • Tatsoi

Cut cleanly and avoid damaging the growing point.

As growth slows, increase the interval between harvests. Plants need time to replace the leaves that have been removed.

Protect Stored Harvests Too

Extending the harvest also includes keeping harvested produce in good condition.

Depending on the crop, storage options include:

  • A cool, dark room

  • A frost-free shed

  • A cellar

  • A refrigerator

  • Boxes of suitable packing material

  • Clamps or other traditional outdoor storage

  • Freezing

  • Drying

  • Fermenting

  • Pickling

  • Bottling or canning using a tested method

Inspect stored crops regularly and remove anything beginning to rot.

Do not store damaged produce with sound vegetables, as decay can spread.

Keep Records of What Worked

The value of each protection method becomes clearer over several seasons.

Record:

  • The crop and variety

  • Sowing and planting dates

  • The first-frost date

  • The protection used

  • Lowest temperatures experienced

  • Damage after cold weather

  • Final harvest dates

  • Problems with pests, wind or humidity

  • Which crops survived winter
