Green Tomato and Apple Chutney

Green tomato and apple chutney with fresh apples and green tomatoes.

A fruitier chutney for cheese and sandwiches. Makes about 650 ml. Preparation: 20 minutes. Cooking: 55–70 minutes.

Ingredients

• 600 g firm green tomatoes, chopped

• 350 g tart apples, peeled, cored and diced

• 200 g red onions, chopped

• 200 ml cider vinegar (5% acidity)

• 170 g soft brown sugar

• 60 g raisins

• 15 g fresh ginger, grated

• 1 tsp mustard seeds

• ½ tsp ground allspice

• 1 tsp fine salt

Method

1. Combine everything in a wide stainless-steel pan. Heat gently until the sugar dissolves.

2. Simmer uncovered for 55–70 minutes, stirring frequently near the end, until thick enough to mound on a spoon.

3. Cool promptly and transfer to clean covered containers.

Storage

Refrigerate for up to 2 weeks or freeze for up to 3 months. This original recipe has not been validated for room-temperature canning.
