Crisp Fried Green Tomatoes

Golden crisp fried green tomato slices with green centres.

Firm green tomatoes hold their shape beautifully under a crisp coating. Serves 4. Preparation: 15 minutes. Cooking: 12 minutes.

Ingredients

• 2 large firm green tomatoes (about 450 g), sliced 1 cm thick

• 60 g plain flour

• 1 large egg

• 30 ml milk

• 90 g fine cornmeal or polenta

• 1 tsp fine salt

• ½ tsp smoked paprika

• ¼ tsp black pepper

• 60 ml neutral oil, for shallow frying

Method

1. Pat the slices dry. Put flour in one bowl; whisk egg and milk in a second; mix cornmeal, salt, paprika and pepper in a third.

2. Coat each slice in flour, then egg mixture, then cornmeal. Rest for 5 minutes.

3. Heat a thin layer of oil over medium heat. Fry in batches for 3–4 minutes per side until golden and hot through. Drain on kitchen paper.

Storage

Serve immediately. Refrigerate leftovers within 2 hours and reheat until piping hot the next day.
