Creamy Celeriac Soup

Pale creamy soup in a white bowl topped with golden croutons and green herbs

Celeriac makes a naturally silky soup with a gentle celery flavour. A little cream rounds it out, but the vegetables do most of the work.

Serves 4 | Preparation: 20 minutes | Cooking: 30 minutes | Total: 50 minutes

Ingredients

  • 700 g celeriac, peeled and cut into 1 cm dice

  • 1 potato (150 g), peeled and diced

  • 1 onion (180 g), chopped

  • 25 g butter

  • 2 garlic cloves, chopped

  • 900 ml vegetable stock

  • 80 ml double cream

  • 10 ml lemon juice, to taste

  • Salt and black pepper

Method

  1. Scrub the celeriac before peeling, cutting away the knobbly skin and any soil-filled crevices. Dice the clean flesh and weigh 700 g.

  2. Melt butter in a large saucepan. Soften the onion for 8–10 minutes. Add garlic and stir for 1 minute.

  3. Add celeriac, potato and stock. Simmer gently for 20 minutes or until the vegetables are completely tender.

  4. Remove from the heat and blend with a stick blender, keeping the blade submerged. Stir in cream and lemon juice to taste. Thin with water if needed and reheat until piping hot. Season before serving.

Variations and substitutions

Add a peeled, chopped tart apple with the celeriac for a sweeter version. Replace cream with unsweetened oat cream and butter with 20 ml olive oil for a dairy-free bowl. A pinch of nutmeg or 1 tsp thyme leaves also works well. Celeriac is a celery allergen, including when cooked.

Homegrown and seasonal produce

Use firm, heavy homegrown or stored roots. The weight is after peeling, so buy or harvest around 900 g–1 kg. Small roots can lose a greater proportion to trimming. Refrigerate peeled pieces if preparing ahead.

Storage and freezing

Cool quickly in shallow containers and refrigerate within 2 hours at 5°C or below; eat within 48 hours. Freeze for up to 3 months, preferably before adding cream. Defrost in the fridge and use within 24 hours. Reheat once until piping hot throughout, stirring; add cream after reheating for a smoother result.
