Serves 4 | Preparation: 15 minutes | Cooking: 0 minutes | Total: 45 minutes

Times include any chilling, resting or cooling stated below. Oven temperatures are conventional; reduce by 20°C for a fan oven.

Ingredients

  • 400 g fresh autumn raspberries, or frozen raspberries cooked according to the packet and cooled

  • 4 tbsp sugar or honey

  • 1 tsp lemon juice

  • 300 ml double cream

  • 150 g Greek yoghurt

  • 1 tsp vanilla extract

  • 4 shortbread or amaretti biscuits, to serve

Method

  1. If using frozen raspberries, follow the packet’s cooking instructions, then cool quickly and chill before using. For fresh berries, rinse gently and dry. Crush two thirds with half the sugar and the lemon juice; sieve if preferred. Reserve the remaining fresh berries for topping, or use cooled cooked berries.

  2. Whip the cream with the remaining sugar and vanilla until it holds soft peaks, then fold in the yoghurt.

  3. Gently fold the raspberry purée through the cream so it ripples rather than blends in completely.

  4. Spoon into 4 glasses and chill for about 30 minutes, then top with the whole raspberries and a biscuit.

Variations and substitutions

Stewed rhubarb, blackberries or poached plums work well too. Best eaten the day it is made.

Use cooled poached plums or blackberries instead of raspberries. Choose vegetarian biscuits, and check amaretti ingredients if avoiding alcohol.

Homegrown and seasonal produce

Autumn raspberries are delicate: pick ripe sound berries and chill promptly. Use frozen berries according to their packet’s cooking directions before cooling for the fool.

Storage and freezing

Keep prepared ingredients covered in the fridge at 5°C or below. Eat within 48 hours, or within 24 hours for the raspberry fool and dressed tomato mixture. Assemble toasts just before serving. These finished salads, topped toasts and cream desserts do not freeze well; freeze suitable fruit or roasted vegetables separately instead.
