Tender spiced apples under a buttery, golden oat crumble.
Serves 4 | Preparation: 20 minutes | Cooking: 45 minutes | Total: 75 minutes
Times include any chilling, resting or cooling stated below. Oven temperatures are conventional; reduce by 20°C for a fan oven.
Ingredients
800 g cooking or eating apples, peeled and sliced
40 g sugar, for the apples
1 tsp ground cinnamon
1 tbsp lemon juice
120 g plain flour
60 g rolled oats
80 g cold butter, cubed
70 g brown sugar
Method
Heat the oven to 180°C. Toss the apples with the sugar, cinnamon and lemon juice and tip into a baking dish.
Rub the butter into the flour and oats until it looks like coarse crumbs, then stir in the brown sugar.
Scatter the crumble evenly over the apples without pressing down.
Bake until the top is golden and the fruit is bubbling at the edges, about 45 minutes. Cool for 10 minutes before serving with cream or custard.
Variations and substitutions
Mix in pears, plums or blackberries. Use plant butter for a dairy-free version.
Homegrown and seasonal produce
Use stored apples after cutting away bruises; discard rotten or mouldy fruit. Cooking apples collapse more readily, while eating apples keep some shape.
Storage and freezing
Cool promptly, cover and refrigerate within 2 hours at 5°C or below. Eat within 48 hours. Freeze cooled portions for up to 3 months; freeze carrot cake without frosting and other desserts without cream, custard or yoghurt. Defrost in the fridge and use within 24 hours. Reheat desserts served warm once until piping hot; cakes can be eaten chilled or brought briefly to serving temperature.
